My oldest son Mike came to visit for Mothers day and threw this salad together. It became an instant favorite with our family, I hope you enjoy it too.

  • 2 cups (about 1 tray 3x6) Radish Greens cut ½”
  • 2 cups (about 1 tray 3x6) chopped Pea Shoots
  • 2 cups Fresh Spinach leaves
  • 4 leaves chopped Romaine Lettuce
  • ¼ cup walnut pieces (lightly roasted)
  • ¼ cup grated Parmesan Regiano
  • 3 TBSP Colavita Olive Oil
  • 1 TBSP Balsamic Vinegar

Bibb Salad

My favorite lettuce is Bibb, and there are a few varieties of this lettuce that I like to grow. North Star for very early spring and late fall cold frame garden, but the basic Boston Bibb is the standard. The semi compact head, meaty leaves and sweet taste make it a perfect lettuce. Add to those the fact that it is easy to grow perfect heads every time, puts this variety on the top of my list! Now add sprout to this and you have a perfect salad. Bibb Salad

  • 1 large head or about ten large leaves
  • 1 fresh carrot grated
  • 1 ripe avocado cut in ½” chunks
  • 1 cup Sunflower Greens chopped
  • 1 cup Radish Greens chopped
  • Mix the dressing right on the salad
